April is a funny month weather wise. In the northern hemisphere it seems to always want to give you a taste of spring before turing 180degrees and showing you the cold shoulder. Almost literally…I think Mallorca is actually colder now than its’s been all winter. The grey weather continues and I’m seizing the indoor-day to make granola.
Here’s the ingredients:
500g Rye flakes
300ml Shredded coconut
200ml Pistachios
150ml Medjool date syrup (or honey or maple syrup if no date syrup around) (add more if you want more granola ”clumps” and sweetness
100ml Sunflower seeds
100ml Pumpkin seeds
100ml Flax seeds
100ml Sesame seeds
200ml Cashews, or any other nuts
150m Apple juice home made or the organic cloudy type from the shop
Salt
Back pepper
Loads of cardamom
15 Dates, pitted and chopped
A handful Sultanas or any other dried fruit like ginger, papaya, banana
Here’s the method:
Put the oven on 140.
Mix all the dry ingredients, except the two last, in a bowl
Add syrup and apple juice, mix well
Spread on baking paper lined oven trays
Roast till golden and completely dry, stir now and then. Also open the hatch slightly in between to let out moisture. Total time about 20min
